Follow these steps to pull a cafe-quality shot at home:

1. Choose fresh beans. Use espresso-roast beans ground no more than 30 minutes before brewing. Freshness makes a huge difference in crema and flavor.
2. Dial in your grind. Set your grinder to a fine, table-salt consistency. Too coarse and the shot will be weak and watery; too fine and it will be bitter and slow.
3. Dose correctly. Use 18–20 g of ground coffee for a double shot. Level the grounds evenly in the portafilter basket.
4. Tamp with consistent pressure. Press the tamper straight down with roughly 30 lbs of pressure. An even tamp prevents channeling, where water shoots through weak spots instead of extracting evenly.
5. Pre-heat your machine. Run a blank shot of hot water through the group head to bring it up to the ideal 90–96°C brewing temperature before you lock in the portafilter.
6. Pull the shot. Aim for 25–30 seconds to yield around 36–40 ml of espresso. A rich tiger-stripe pattern in the cup and a golden-brown crema on top tell you the extraction is on point.
7. Taste and adjust. Too sour? Grind finer or extend your extraction time. Too bitter? Grind coarser or shorten the time. Small adjustments make a big difference.

Single-Origin Coffee

Single-origin beans come from a single farm, estate, or defined region within one country. Because the terroir — the combination of soil, altitude, rainfall, and processing method — is specific to that one place, the flavors are distinctive and sometimes surprising. An Ethiopian Yirgacheffe might taste of jasmine and blueberry; a Colombian Huila can bring notes of caramel and red apple.

Single-origins are ideal if you enjoy exploring new flavor profiles and want to understand how geography shapes a cup. They work best in brewing methods that highlight clarity and nuance, such as pour-over, Chemex, or AeroPress.

Blended Coffee

Blends combine beans from two or more origins, roasted to create a cup that is balanced, consistent, and familiar. Roasters craft blends so that the strengths of one origin compensate for the weaknesses of another — for example, pairing a bright, high-acid Ethiopian with a heavy, chocolaty Brazilian to achieve a smooth, full-bodied result.

Blends are the backbone of most espresso drinks. Their consistency makes them reliable for milk-based drinks like lattes and cappuccinos, where the coffee needs to hold up against steamed milk.

Which should you choose?

If you drink your coffee black and love tasting something new every bag, go single-origin. If you prefer a rich, reliable everyday cup or mainly drink espresso-based drinks, a well-crafted blend is your best friend. Many coffee lovers keep both on hand!

Unlike hot-brewed coffee, cold brew is never exposed to heat, which means the acids that cause bitterness and stomach discomfort are never extracted. The result is a naturally sweet, mellow concentrate you can enjoy over ice, mix with milk, or use as the base for coffee cocktails and desserts.

What you need:

• 100 g (about 1 cup) coarsely ground coffee — medium to dark roast works best
• 700 ml (3 cups) cold or room-temperature filtered water
• A large jar or jug and a fine-mesh strainer or cheesecloth

Step-by-step instructions:

1. Grind coarsely. Use a coarse grind, similar to raw sugar. A finer grind will over-extract and make the brew bitter and difficult to filter.
2. Combine coffee and water. Add the grounds to your jar and pour in the cold water. Stir gently to make sure all the grounds are saturated.
3. Cover and steep. Place the jar in the refrigerator and leave it for 12–18 hours. Steeping longer (up to 24 hours) produces a stronger concentrate.
4. Strain. Pour the mixture through a fine-mesh strainer lined with a paper coffee filter or cheesecloth into a clean jar. Discard the grounds.
5. Serve. Fill a glass with ice, pour in your cold brew concentrate, and top with water or milk to taste. A 1:1 ratio of concentrate to water is a great starting point.
6. Store. Keep the concentrate in a sealed jar in the fridge for up to two weeks.
